Easy-quickie okra soup




This soup is what should be called 'sharpally, sharpilly things' haha, it doesn't require much, ready within few minutes, don't even get me started on the taste mmmmmmm scrumptious and not forgetting about all the health benefits which is something I'm going to be sharing soon on this blog. There are different ways to cook Okra but this as far as I know is the fastest okra soup ever....mmm...maybe not hehehe, I have my evil grin on yea, I have another quickie Okra soup recipe but that will be story for another time.
What you need:


3 hand-full Okra
1 big Catfish
1/4 cup Palm oil
Salt to taste
1 seasoning cube.
1 big onion (chopped ) 
6 scotch bonnet(ata rodo) (grinded with half of the onions in a blender to a near smooth consistency )
I hand full Uziza leaves (chopped )

Method:
Clean catfish and place in very cold water, set aside, chop your okra. Heat a soup pot on the fire, add palm oil and let heat till the color gets a shade lighter than it initially was, add onions,stir for twenty seconds, add pepper stir and let fry for 2 minutes, add water, add salt, taste and add seasoning cube, add fish and Uziza, allow to cook for five minutes, add Okra stir and let cook without covering the pot. After another five minutes, give it a gentle stir and remove from heat. Your soup is ready. Chop and testify.

  1. What is the common name for uziza leave and the scotch bonnet cuz I have never heard of them?

    1. Hi Anonymous : ) Another name for Uziza plant is Piper Guineense or Guinea Pepper; it's fruit is dried and used as hot spice. In this soup, I used the leaves instead. The name Uziza is as common as it gets. where is your location? I could help you find out what it's called there. Scotch bonnet is a variety of Chili pepper, it is the smaller version of the red bell pepper but much spicier. Other names for it includes: Ata rodo, Bonney pepper, Boabs bonnet, and Scotty bons.
